Soil type : volcanic, rich in phosphorus , potassium, and microelements.
Year of vineyards' planting : various years , since 1963 to 1992.

Harvest – time : around September 10th – September 20th .
Vine density : 4500 vines a hectare
Training system : “Gouyot” system, with approximately eight buds a plant.

Low-temperature skin fermentation, to obtain the greatest aromatic and structural extraction.
After that, there is the removal of the must from the lees at low temperatures; finally, must ferments for about 15 days,at a controlled temperature of 18/20° C.
MATURATION: sojourns in stainless – steel for around 3 months.
